Thanksgiving Leftover Strata
3 tablespoons soft butter
2 cups leftover cooked stuffing
2 cups shredded or cubed leftover roasted turkey pieces
2 cups leftover mashed potatoes
1 1/2 cups turkey gravy
-Butter the insides of a 3-quart glass baking dish generously with half the soft butter. Layer the stuffing in the bottom of the dish and press down lightly. Dot the remaining soft butter on top of the dressing. Place the turkey pieces in a layer over the stuffing and again, push down lightly. Cover with mashed potatoes. (If potatoes are cold and lumpy, place in the microwave for 2 -3 minutes, then stir until smooth. Add a bit of milk if necessary to smooth them out.) Spread potatoes over the turkey layer and smooth out with a spatula or the back of a spoon.
-If gravy is cold, heat in the microwave for 60 seconds. Stir and whisk the gravy until smooth adding a bit of water if necessary to thin it out. Pour over top of potatoes. Cover the baking dish with foil.
-Preheat oven to 350 degrees and place strata in oven. Bake covered, for 45 - 50 minutes until heated through. Remove from oven and serve with cranberry sauce. Makes about 8 servings.
**The gravy always seems the first to go, so whip up a bit more using the following recipe (or a packet of “Knorr’s Roasted Turkey” gravy mixed with chicken broth.)
Turkey Gravy without Drippings
¼ cup unsalted butter
¼ cup all-purpose flour
16 ounces (2 cups) broth, chicken, turkey, or vegetable
¼ teaspoon pepper
½ teaspoon salt, to taste
1/2 small onion, minced
2 cloves garlic, minced
1 teaspoon poultry seasoning.
-In a medium saucepan over medium heat, melt butter. Add onion and saute 3 -4 minutes until soft. Add garlic and saute another 30 seconds. Whisk in flour until completely incorporated into butter and vegetables. Cook for one minute.
-Slowly add broth to pan, whisking to incorporate with a wire whisk. Add pepper and poultry seasoning and whisk to incorporate. Bring to a simmer and cook, whisking frequently, for about 5-7 minutes, or until desired thickness is achieved.
-Remove pan from heat and season with salt to taste.
