Killer Bean Dip

Creamy beans packed with beef, bacon, onions, spiced with salsas and chiles and all the Tex-Mex flavors we love! A dip that packs a whallop of satisfaction onto a tortilla chip!

Killer Bean Dip

1 small package dry pinto beans, or 2 cans pinto beans, liquid drained

1 - 14.5 ounce can diced tomatoes with liquid

1 small can chopped green chiles

1 small can sliced black olives

2 large onions, peeled and diced

4 cloves garlic, peeled and minced

2 - 3 tablespoons chili powder

1/2 cup bacon bits

1 tablespoon powdered cumin

hot sauce or tobasco sauce to taste

3/4 cup medium spiced red salsa

3/4 cup green salsa verde

salt and pepper to taste

1 pound ground beef, browned, crumbled and drained

3 cups grated cheddar or jack cheese

1 1/2 cup diced green bell pepper or combo of green and red bell peppers

-Place dry beans in a a large saucepan and cover with water. Bring to a boil over medium-high heat. Cover and reduce heat to medium low and simmer until very tender, about 2 hours, adding more water if necessary to keep beans from burning.

-Mash beans with some of the cooking liquid with a potato masher. Add tomatoes with liquid, both salsas and green chilies.

-In a medium skillet, heat 2 tablespoons vegetable oil then saute onions and garlic until transparent. Add to bean mixture along with chili powder, cumin hot sauce, salt and pepper.

-In an earthenware casserole dish, spread half the bean mixture. Top with half the ground beef, cheese, bacon, olives and green peppers. Repeat layers.

-Bake uncovered 35 - 40 minutes at 350 degrees. Cover top loosely with foil if the cheese begins to brown. Serve warm with tortilla chips. Garnish with fresh chopped tomatoes, green onions and sour cream, if desired. Serves 10 - 12 as an appetizer.

Cook beans until very tender, then mash and stir in tomatoes, salsas and green chilies.

Layer half the bean mixture into an earthenware baking dish. Add a layer of ground beef, bacon, olives and bell peppers.

Add half the cheese on top of the first layer of beans and meat. Repeat the layers one more time.

Garnish cooked bean dip with fresh tomatoes, green onions and sour cream, if desired.

Serve with corn chips or tortillas. Dig in and load them up!
