caramel Apple Pie
CaramEl apple pie
6 cups apples, peeled, cored and sliced in thin slices
1/2 cup light brown sugar
1/2 cup sugar
1/3 cup flour
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/2 teaspoon salt
1 tablespon lemon juice
1 teaspoon vanilla extract
4 tablespoons heavy cream
4 tablespoons butter melted
-Peel and slice apples. Sprinkle and toss with lemon juice. Combine all dry ingredients in a large bowl and stir in apples, tossing to mix. Add vanilla extract, melted butter and cream and stir. Pour apple filling into prepared pie crust.
PREPARE STREUSEL TOPPING:
1/2 cup butter, melted
3/4 cup flour
1/2 cup oatmeal
1/2 cup brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
30 pieces of Kraft Caramels
-Melt butter in medium saucepan. Stir in flour, oatmeal, brown sugar, cinnamon and salt until well mixed. Sprinkle on top of the apple filling in the pie crust.
-Melt caramels over low heat in heavy-bottomed medium saucepan, stirring frequently. (If caramels don’t melt smoothly, stir in a bit of cream.)
-Preheat oven to 425 degrees. Cook pie for 15 minutes then lower temperature to 350 degrees and continue to bake another 40 to 45 minutes. 15 minutes before the end of baking time, pull the pie out of the oven and drizzle the melted caramels over the streusel topping. Continue cooking another 15 minutes or until fork easily pierces apple slices with just a bit of reisitence. Remove from the oven and allow to cool at least 30 minutes before serving.
By lifting and gently pushing, fit crust snugly into the pie plate and brush out any excess flour from dough.
