Apple Slab Pie with Cinnamon Sauce
APPLE SLAB PIE WITH CINNAMON SAUCE
6 cups tart apples, peeled, cored and sliced in thin slices (Granny Smith or other firm baking apples, recommended.)
1/2 cup light brown sugar
1/2 cup sugar
1/3 cup flour
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/2 teaspoon salt
1 tablespoon lemon juice
1 teaspoon vanilla extract
4 tablespoons heavy cream
4 tablespoons butter melted
-Peel and slice apples. Sprinkle and toss with lemon juice. Combine all dry ingredients in a large bowl and stir in apples, tossing to mix. Add vanilla extract, melted butter and cream then stir. Pour apple filling over prepared pie crust and spread to create an even covering of apples.
PREPARE STREUSEL TOPPING:
3/4 cups butter, melted
1 cup flour
3/4 cup oatmeal
3/4 cup brown sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
3/4 teaspoon salt
3/4 cup finely chopped pecans or walnuts (optional)
-Melt butter in medium saucepan. Stir in flour, oatmeal, brown sugar, cinnamon, nutmeg and salt until well mixed. Sprinkle on top of the apple filling in the pie crust.
-Preheat oven to 400 degrees. Cook pie for 15 minutes then lower temperature to 350 degrees and continue to bake another 30 to 40 minutes or until a fork easily pierces apple pieces with just a bit of resistance and crumble topping is slightly brown. Remove from the oven and allow to cool at least 30 minutes before serving.
-Cut into squares and serve with cinnamon sauce and vanilla ice cream or sweetened whipped cream, if desired.
PREPARE CINNAMON SAUCE:
3 tablespoons butter
1 tablespoon cornstarch
1/2 cup water 1 cup brown sugar
1/2 cup white corn syrup
1 tablespoon ground cinnamon
1/2 teaspoon freshly grated nutmeg
dash of salt
2 teaspoons vanilla extract
-Melt butter in medium saucepan over medium-high heat. Add water mixed with cornstarch, brown sugar, corn syrup, cinnamon, nutmeg and salt. Bring to a boil, stirring frequently and let bubble until thickened, about 3 minutes. Remove from heat and stir in vanilla extract. Set aside or let cool and chill for later use.
